Whole: shaved over fillet, fondue, fried egg, tagliatelle. Grated: sautéed in oil with a garlic clove, salt and pepper. Used in first and second courses, on omelettes and eggs.

What is black Périgord truffle?
Black truffle is scientifically identified as Tuber Melanosporum Vitt. It is recognized by its characteristic underground origin and the dark color of its spores. Highly prized, though less so than white truffle, it is also known as Norcia truffle or, in French, Truffe du Périgord.
Black truffle is a fungus that lives in symbiosis with shrubs or trees, from which it draws nourishment and, above all, its aromas and scents. It grows in hilly and mountainous environments, in close symbiosis for example with downy oak and holm oak. Due to the effect of its mycelium, the area where the truffle grows usually has very sparse vegetation, a feature that helps in locating it.
It favors sedimentary, well-drained soils, granular and rich in limestone. This variety is particularly widespread in Umbria and the Marche, especially around Spoleto and Norcia; it also grows in Tuscany, Lazio and the more sheltered areas of Lombardy, Piedmont and Veneto. The most prized variety is the black truffle of Norcia, harvested in a specific season, though other less prized varieties are available year-round.

Black truffle from Southern Europe
Black Périgord truffle, scientifically named Tuber melanosporum, is distinguished by its typical tuber shape and its black to dark brown color. It is found mainly in Southern Europe – specifically in France, Italy and Spain. Among the best-known areas for black truffle are Umbria, Tuscany, Lombardy, Piedmont, Veneto and Spoleto; Norcia and Lazio are also renowned harvesting areas. Other cultivation areas can be found in North America, Australia and New Zealand. Black Périgord truffle is also called the „black diamond,“ as it is considered the most prized among the black truffle varieties. This truffle is harvested between November and March.
An aromatic winter truffle for haute cuisine
When fully ripe, Périgord truffle has a slightly sweet scent reminiscent of musk, blending with damp, earthy notes. Delicate hints of dried fruit, strawberries and cocoa round out the aromatic top notes harmoniously. When cooked, these aromas shift toward peppery, slightly bitter notes. While the bouquet tends to dissipate quickly at room temperature, cooler storage helps keep the aromas better combined.
How to use Périgord truffle
Périgord truffle can be served either whole or grated to enhance dishes. It is excellent both raw and cooked. Egg dishes and pasta such as fried egg or tagliatelle make an excellent base for this prized fungus. It is also wonderful for enhancing meat fillets.
Prefer pan-fried dishes? An omelette pairs beautifully with Périgord truffle sautéed in oil, pepper, salt and garlic. Risotto and flavorful soups also offer an intense taste experience.
