Homemade Truffle Butter: Recipe for Restaurants

Truffle butter is a versatile staple for steak, bread, pasta and sauces. With quantities for 500 g of butter and the cost calculation per portion.

  • 500 g butter – base quantity
  • approx. 10 min – preparation, plus chilling time
  • 5% truffle – reference value

Ingredients for 500 g of butter

  • 500 g butter, room temperature
  • 25 g fresh truffle, finely grated or chopped (5%)
  • 5 g fleur de sel

Preparation

  1. Beat the butter until creamy and smooth.
  2. Fold in the truffle and fleur de sel.
  3. Shape into a log on baking paper or foil and wrap tightly.
  4. Chill for at least 2 hours, ideally overnight, so the aroma can develop.
  5. Slice and use portion by portion.
